Henry had the fire. I had the secrets.
I was born in 1947 in a village of rice fields and duck ponds near Taishan. At twenty-one I came to San Francisco and worked in my Uncle Wing's kitchen in Chinatown. That is where I met Henry, the loudest cook at the wok.
In 1974 we opened the Golden Lantern in a little Ohio town. Two traffic lights and one Chinese restaurant. For 41 years Henry cooked over the fire, and I made every sauce, every marinade, and every bit of prep that made his food come out right.
People still stop me at Kroger. "Ruby, how did you make that sauce?" So my granddaughter Jenny came every Sunday for a year with a notebook, and we wrote down every spoon and every minute.
I am not a chef. I ran a family restaurant and fed four children while counting every dollar. Everything in this book works in an ordinary skillet, with groceries from an ordinary store.
